Beef Cutlets

Beef cutlets are a juicy, fragrant and very tasty meat dish made from ground beef, fried in a pan or in the oven.

INGREDIENTS

  • pork - 700 g.;
  • beef - 700 g.;
  • onion - 3 pcs.;
  • milk - 250 g.;
  • white bread - 1/3 loaf;
  • flour - 100 g.;
  • breadcrumbs - 100 g.;
  • salt - 4 tsp.;
  • ground black pepper - 2 tsp.;
  • refined vegetable oil - 200 g.

 

METHOD

  1. We crumble white bread into small pieces in a deep bowl (it is better to use humps) and pour 250 grams of milk, room temperature, and insist. While the bread is soaking in milk, let's take care of the meat.
  2. We wash the meat (pork and beef) and cut it into small pieces so that it fits comfortably in the meat grinder. Initially, when buying meat, I advise you to pay attention to the fatter pieces, then the cutlets will turn out juicier. Peel the onion and cut into quarters. Cooking minced meat. We pass the chopped meat through a meat grinder, lowering the pieces of beef and pork in turn. We do the same simple manipulations with onions and bread soaked in milk. Salt, pepper and mix well several times so that the minced meat is uniform, both in consistency and in saltiness / pepperiness. We form cutlets from cooked minced meat, rolling each in breadcrumbs. You can use flour instead of breadcrumbs. So that the meat does not stick to your hands, before sculpting each cutlet, your hands must be moistened in cold water.
  3. We heat the pan, add vegetable oil to it so that it covers the entire bottom of the pan. We spread the cutlets on a hot frying pan with oil, reduce the temperature of the stove to medium and fry the cutlets on both sides, NOT covering with a lid, periodically turning over, about 25 minutes.
  4. For quick cooking, you can use two pans at once. After the cutlets are browned, add 2 tablespoons of boiled water to the pan and cover it with a lid, make a small fire and steam the cutlets for about 10 minutes.
  5. We put the finished cutlets in a deep dish and cover with a lid. Next, fry the rest of the cutlets in the same way, after adding a little oil to the pan.
