Kada is a popular Georgian biscuit from the city of Poti. Easy to prepare. Pretty sweet, but in moderation.

INGREDIENTS

  • 750 g. flour;
  • 250 g. of melted (or butter) butter;
  • 150 g. of sugar;
  • salt;
  • nuts and fruits optional;
  • 1 yolk and 1 tbsp. sour cream for brushing.

 

METHOD

  1. Melt the butter. Pour 1 cup of warm water into a bowl, add enough sifted flour to knead a stiff dough. Add half of all the butter, salt on the tip of a knife, and half of all the sugar. Knead quickly into a smooth dough, wrap in a towel, wrap and place in a warm place for 1 hour.
  2. While the dough is resting, put the pan on the fire, pour in about 1 cup of the remaining flour, put the remaining oil, mix and cook over low heat, stirring, for about 10 minutes. At the end, pour out the sugar, mix and remove from heat - you get the filling for the kada. You can add nuts or fruits.
  3. Divide the dough into portions of approximately 70 g. Roll into balls. Then roll each ball into a pancake, put a spoonful of filling on them and pinch them like khachapuri into a “kitty bag”. Lay on a baking sheet seam side down.
  4. Lubricate the top with egg yolk, mixed with sour cream, and bake in an oven preheated to 180 C or in ketsi on coals for 15 minutes. Cool and serve.
