Utskho-suneli is a Georgian spice of light yellow or light green color, has a small grain size, with a pronounced nutty smell. For its preparation, the plant Blue fenugreek (lat. Trigonella caerulea, Blue sweet clover) of the legume family is used. The plant itself does not have a pronounced smell and acquires it only after drying and calcination. Dried leaves are used to flavor and color green cheese. Fruits and inflorescences are used as a seasoning for utskho-suneli and for making basturma.
