INGREDIENTS

  • goatling 4 kg.;
  • milk 3 l.;
  • pumpkin 2 kg.;
  • vegetable oil 50 ml.;
  • butter 100 g.;
  • olive oil 50 ml.;
  • thyme (thyme, thyme) 30 g.;
  • salt;
  • ground black pepper to taste.

 

METHOD

  1. Warm the milk slightly, add a good handful of salt, a pinch of pepper and a good bunch of thyme (leave some of the thyme for garnish). Pour the milk into a suitable container, marinate the kid for three hours, turning it over in milk from time to time and massaging it.
  2. Lubricate the pickled kid with vegetable oil and send it to the oven, heated to 120 degrees, for an hour and a half, then increase the heat to 180 degrees and bake for another thirty minutes.
  3. Simultaneously with the increase in heat, place a baking sheet with diced pumpkin in the oven. Salt and pepper the pumpkin, drizzle with olive oil, put pieces of butter on top and sprinkle with thyme.
