This potato omelette is an essential part of any Spanish breakfast.

INGREDIENTS

For an omelet

  • 0.5 kg. potato;
  • 1 onion;
  • 4 eggs;
  • 2 yolks;
  • salt, pepper;
  • olive and vegetable oil.

For Pan con tomate

  •  bread;
  • tomatoes;
  • garlic;
  • olive oil.

 

METHOD

  1. We clean the potatoes and cut into very thin slices.
  2. Finely chop the onion and mix it with potatoes.
  3. Deep fry the onions and potatoes in a large amount of a mixture of olive and vegetable oil, over medium heat, 20 minutes.
  4. We mix four eggs and 2 yolks, salt, pepper and, without beating the eggs, mix them with warm potatoes and onions. Let stand 30 minutes.
  5. While the tortilla is standing, fry the bread in a dry frying pan or in a toaster.
  6. Rub bread with garlic and tomato and drizzle with olive oil. Pan con tomato is ready.
  7. Heat up a frying pan with a little olive oil.
  8. Add tortilla and fry for 2-3 minutes over medium heat.
  9. Turn over with a plate and fry for 2 minutes.
  10. Serve the tortilla on pan con tomato.
