Vichyssoise

Traditional french onion thick soup.

INGREDIENTS

  • leeks 350 g.; г.;
  • potatoes 350 g.;
  • butter;
  • cream 150 ml.;
  • broth or water 1 liter;
  • green onions or parsley for serving.

 

METHOD

  1. Finely chop the white part of the leek and start to simmer for 5 min. in butter over low heat.
  2. Add finely chopped potatoes and simmer until half cooked over low heat.
  3. Add water or stock and bring to a boil.
  4. Transfer cooked potatoes and onions with a slotted spoon to a blender and grind until smooth.
  5. Transfer the contents of the blender to a clean saucepan and return to the stove.
  6. Add cream and let simmer gently for 4 minutes.
  7. Salt and pepper..
  8. Serve with green onions or parsley.
