Tender pork slowly stewed in oil.
INGREDIENTS
pork 1 - 1.5 kg.;
6-7 medium bulbs;
butter;
vegetable oil;
2-3 bay leaves;
1 teaspoon of vinegar;
1 teaspoon kondari (savory);
salt;
freshly ground black or red pepper.
METHOD
Marinate the pork in a puree of two onions, preferably for 5 hours.
In a small pot with a lid, dilute the butter and vegetable oil to cover the meat by a couple of millimeters. Bring to a boil and reduce heat to low.
Put the meat in a pot and simmer under the lid for one hour over very low heat, almost without boiling the broth.
Cut 4-5 onions into large rings and add to the pot along with vinegar and salt. Cover and simmer for another hour.
30 min. until tender, add pepper, bay leaf and kondari.
