Pork stewed in oil and onion

Tender pork slowly stewed in oil.

INGREDIENTS

  • pork 1 - 1.5 kg.;
  • 6-7 medium bulbs;
  • butter;
  • vegetable oil;
  • 2-3 bay leaves;
  • 1 teaspoon of vinegar;
  • 1 teaspoon kondari (savory);
  • salt;
  • freshly ground black or red pepper.

 

METHOD

  1. Marinate the pork in a puree of two onions, preferably for 5 hours.
  2. In a small pot with a lid, dilute the butter and vegetable oil to cover the meat by a couple of millimeters. Bring to a boil and reduce heat to low.
  3. Put the meat in a pot and simmer under the lid for one hour over very low heat, almost without boiling the broth.
  4. Cut 4-5 onions into large rings and add to the pot along with vinegar and salt. Cover and simmer for another hour.
  5. 30 min. until tender, add pepper, bay leaf and kondari.
